Default Coloured Thoroughbreds - How?????

I've been led to believe that only certain breeds have colour like quarter horses etc etc so how are they breeding coloured thoroughbreds.

Can anyone enlighten me please. I'd love a palomino lol.

Seen a site and looked at pedigrees but as its from the USA there is one side of the stallion that even I cant recognise breeding so I'm a bit suspicious.
