It would more than likely be the muesli that hots him up, it tends to be a sweet, high energy food, so probably not the best idea to feed him that. You say he hots up on barley? Coolmax is generally made up of around 1/3 barley, but if he seems ok on that then thats fine. Obviously with being a big horse he is requiring 4kg a day, but if he is managing that fine then it shouldnt be a problem. They do need a LOT of roughage. ie good hay, these big horses. Also the addition of a source of fat will help, whether oil, rice bran, sunflower seeds(but just be cautious of these as they apparently can affect some horses). He was fat on the showtorque because its very high in protein and fat. Its not a bad feed actually, if he doesnt hot up on it it could be worth a go.

As an estimate(because i dont know his actual workload) I would be feeding, this; (twice a day)
1 scoop oaten chaff
3 scoops lucerne chaff
2kg coolmax
Either 500g rice bran (ie equijewel) or 1 cup veg oil. Plus half cup on sunflower seeds.
2 biscuits hay. I would possibly be giving 1 or 2 of these biscuits per day as good lucerne hay.
